This easy meal is incredibly friendly. It is budget friendly as an affordable meal with 4 simple ingredients: ground beef, flour tortillas, refried beans, and cheddar cheese. It is family friendly with replaceable or even removable ingredients for the picky eaters. 

This is also delicious as beef and cheese taquitos or with chicken and black beans. And kid friendly in that these 'no mess' finger foods are easy to eat, and even easier to clean up after.

Can homemade taquitos be made in the oven? Yes. 

Will baked ground beef taquitos be tasty? Definitely. 

But as an advocate for the air fryer, will oven baked taquitos be as crisp or healthy? This is where the air fryer comes out on top. Taquitos in the air fryer produce a crunchier outer layer while maintaining a juicy center that has discarded any excess oils; leading to a healthier meal in less time. Yes, this takes less time than your average 20 minute meal.

Recipe tips:


  • If your tortillas have been refrigerated and are stiff, microwave them for a few seconds so they soften and are easier to roll.
  • Make sure to lay your taquitos seam side down so they stay rolled.
  • These taquitos can be frozen. Prep as directed and bake in the oven for 6 minutes. Cool completely, then place into freezer bags. Freeze for up to 2 months. To reheat, bake in the oven for 8 minutes or microwave until heated through.

Air Fryer or Oven Beef, Bean and Cheese Taquitos

Ingredients

  • 1 ½ cups taco meat
  • 1 cup refried beans
  • ¼ cup salsa
  • ½ cup shredded sharp cheddar cheese
  • 8 fajita size flour tortillas
  • cooking spray
  • sea salt

Instructions

  1. In a bowl, blend the taco meat, refried beans, salsa, and cheddar cheese.
  2. Preheat the air fryer or oven to 375 degrees.
  3. Place 2-3 tablespoons of the meat off-center in each tortilla.
  4. Roll up the tortilla as tightly as possible without tearing the tortilla and place on a baking sheet or air fryer basket with the seam side down.
  5. Spray with cooking spray and sprinkle with sea salt.
  6. Place the taquitos in the air fryer or oven for 8 to 10 minutes, or until lightly browned.
  7. Serve with additional salsa, sour cream, or guacamole.
